All you need to set up an outdoor dining area with great street appeal and atmosphere is a suitable space and some inventiveness – then while your customers kick back and enjoy the seasonal warmth, the increased table capacity can generate extra revenue for your business.

If you’re planning on using outdoor space owned by the council (such as the street front of your business), you’ll need to apply for the relevant outdoor dining permits. The requirements and process vary according to which state your business is in, so check with your local council/government authorities for more information on this process.

Once you’ve got your outdoor dining permits, you need to work out how to make the most of the space and lay out the seating to maximise the number of tables. Like your indoor space, aim to create an appealing, inviting ambience in which customers can feel relaxed. Consider theming the space with a particular décor style to match your restaurant theme and values – you may be able to make use of atmospheric lighting, and also create a welcoming environment through pot plants, decorations and music.

As you can’t count on sunshine every day, the space will need to be comfortable in wet weather – which means ensuring warmth and shelter. Pole heaters, canopies and windbreaks are all essential.

When you are trying to maximise the available space, another important consideration is to set up appropriate one-way systems for foot traffic – such as customers entering/leaving and going to the toilets. This way you can avoid congestion and queue. Contactless payment systems and staff training can also help here.
